This past weekend just wiped me out. Last night I was too tired to turn on the TV to watch the bachelorette, and that’s saying a lot. Probably partly because Ashley is mentally exhausting.
No running or workout occurred last night, partly because I was still recovering from Saturday’s 10 miler and partly because I didn’t have the time between work and class. This week I’m attempting to scrounge together meals from whatever random things we have in the freezer in an attempt to not spend money at the grocery store. This is partly because we are going out of town this weekend again and partly because I spent way too much money at World Market yesterday during lunch. In case you didn’t catch on, this post is brought to you today by the word “partly”. Back to World Market.
You think that’s awkward? Try navigating that thing through two elevators, the lobby, and more doorways than you would think.
I finally made it back to the apartment and the peanut factory was curious. Could it be a cat chaise at last???
Sorry girls. I want one as badly as you do.
My purchases passed customs, obviously after a thorough inspection.
I got to work assembling our new chair.
It’s OK to be jealous of my scissors.
I got the chair assembled enough to see how it will look, but not totally finished so I’ll spare you a picture until my handyman can fix it.
At this point I had a few minutes before I had to leave for class so I looked in the freezer for dinner options. Sunday night when I returned I had made an omelet with fresh mozzarella and basil and it was delicious, but I was feeling a bit egged out.
My options were extremely limited. I had a package of Trader Joe’s Garlic & Herb pizza dough, but no sauce. I spotted a few frozen apple chicken sausages and for some reason a corn dog came to mind.
Basically, a sausage wrapped in dough is what I was striving for. It’s good to have goals. First I prepped my Garlic & Herb dough.
I rolled it out and quartered it.
Note to self: a black dress is not appropriate for working with flour when leaving for class in 10 minutes.
Next I defrosted 2 chicken apple sausages.
These guys got cut down the middle and some of that fresh mozzarella stuffed inside.
Then I wrapped them up in the dough.
They were corn-doggish like. I stuck them in the fridge to be baked when I arrived home from class.
Class went by quickly, as usual, as my professor is pretty hilarious. His advice for the day, “If you’re going to kill someone, make sure to turn off that 4 corners thing”.
4 hours later I preheated the oven to 400 and baked these guys for 15 minutes.
They looked good, like mini strombolis. If only I had a danged jar of sauce.
As usual, the melty mozzarella middle was the best part.
Continuing with the little kid theme, I made some TJ’s mac n’ cheese on the side.
In a late addition to the meal, I wanted to get some greens in so I wrapped up some broccoli in tin foil with olive oil and Garlic Gold and grilled it for 10 minutes.
This took a little longer than expected, hence the broccoli for desert.
Tasty weeknight dinner, and the good news is I have leftovers for tonight.
This morning I either turned off my alarm without knowing it or never set it. I woke up on my own and it looked extremely brought outside. I almost didn’t want to look at my phone as I could just see it being 2 PM or something ridiculous like that. Luckily, it was only 5:46. Crisis averted. Now if you’ll excuse me, I need a couple more buckets of coffee.

What a fun, creative meal. I would have never thought to do something like that… but know that you have introduced me to it….
I might try grilling it when I have a back up plan handy!
