I think I might have a slight addiction to eggs lately. Hoagie has made ridiculous claims lately about my various addictions, including stacking and hiding books in as many hidey holes as possible. Apparently he took the time to count the number of books hidden under my side of the bed and the night stand, and it was around 50. What? A girl needs to have her stash accessible in case of sleep less nights. I tell him I could be addicted to worse things, like reality TV, karaoke, or mini versions of our couch cat beds. Erm. ![]()
Today I had a huge monster of the green variety before my run. 
It was pretty standard, but I was in a pretty standard and unadventurous kind of mood.
I had a very slow run, and the only thing that got me through it was the thought of my eggcelent lunch waiting for me upon my return. I made a huge monster of the egg white puff variety, with spinach, mushrooms, and a bit of garlic powder inside. Before:

My belly is one happy camper. On the side I had leftover roasted broccoli and some beans and corn.
We are heading to the Bulls game tonight with two of Hoagie’s clients, and I am confident this meal will hold me over until then.

Matt and I made a special eggs dinner last night…actually breakfast for dinner. Homemade eggs benedict! Quite the adventure and it turned out amazing. Not as healthy as the egg white puff, but I can make it for you sometime if you want to splurge

If I ever buy a microwave the first thing I will make is an egg white puff.
